QUALITY, REGULATION AND EXPERTISE
Since the start of our business, we have been rigorous in selecting each of our suppliers in order to source the very best ingredients. As part of a partnership of trust established with many of them, we are developing a responsible purchasing policy and continue to give preference to suppliers who are themselves producers in order to guarantee optimum quality.
Food hygiene and consumer protection regulations are a daily commitment and we take all the necessary steps to ensure that our suppliers do the same.
We track the history, use and composition of all our products, from raw materials through to the finished product. Regular checks are carried out by external bodies in our workshops. The list of allergenic ingredients used in the composition of each of our recipes is available in the shop and on each product sheet for the information of our consumers. As far as eggs are concerned, we have already started work to encourage the use of eggs and egg products from free-range hens. In fact, we are continuing this work so that, by 2025, all our supplies are guaranteed to be cage-free, in accordance with legislation.
Our production, which remains artisanal, relies on the know-how and experience of our pastry chefs and chocolatiers, all guided on a daily basis by our Chefs Cyril Lignac and Benoit Couvrand. Backed by the professionalism of our craftsmen, we attach great importance to passing on our know-how to trainees and apprentices who join our teams every year.
